Among the five most important necessities of life, food remains the top of all. Nothing does matter if we are hungry. Nevertheless, food, in the present days, is much more than something simply to feed our stomach. It has become one of the most sophisticated
invention of mankind. Food reflects the ways we live, the direction of our thinking, and the lessons we learned from life. It can make us refreshing, revitalizing, and lift up the spirit of our life.
Thai cuisine is one of world’s most popular with a large array of sumptuous and nutritious dishes. The Royal Thai government views that Thai food industry can assist in development of Thai economy. Therefore, Thailand is now launching a national project, “Thai Kitchen World Cuisine”, with the view to increasing national competitiveness to Thai food industry to stand as world’s leader in this field.

The Royal Thai Consulate General, Los Angeles has taken the “Thai Kitchen World Cuisine” into action. In March 2005, the Royal Thai Consulate General began discussion with two famous culinary schools on how to introduce to the People of California the delightful and authentic Thai cuisine. With Thai food becoming highly popular in California and the West Coast of the United States, there is a need to bring forward the genuine Thai food, with balancing combination of taste and wellness. The truth is, however, that the task requires both profound understanding of this delicate Thai way of life as well as talent and professionalism on culinary. Thai is why McDang or M.L. Sirichalerm was chosen to represent this valuable arts and culture of Thailand. And with great collaboration from the California School of Culinary Arts (CSCA) in Pasadena, the project became a reality. Khun McDang is now instructing a special one week course in Thai Food for students and instructors of CSCA. Next week he will be flying to giving another special course for students of Culinary Institute of America (CIA) at Graystone in Napa Valley. Khun McDang’s special instruction courses will be recorded for CIA's World Culinary Arts DVD and Internet Project. The DVD will be distributed to minimum of 5,000 leading chefs, operators and other professionals, including 500 consumer and trade media members. It will also be viewed at www.ciaprochef.com.
